HOT & SPICY BAT WINGS
(Serves 4 as a main dish or 8-10 as an appetizer)
- 20 chicken wings, small
- 1 c ketchup
- 1/4 cup molasses
- 2 tablespoons garlic, minced
- 1 tablespoon ginger, minced
- 1 pc bay leaf
- 2 tablespoons Worcestershire sauce
- 3 tablespoons cider vinegar
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 4 tablespoons cilantro leaves, chopped
- 1 tablespoon black pepper, ground
- 2 tablespoons red wine or dark beer
- 2 tablespoons dry mustard
- 1 tablespoon Tabasco or dried chilli flakes, optional

Preheat oven to 350°F. Season chicken lightly with salt and pepper and place on baking sheet single layer.
Bake in oven for approximately 20 minutes, until wings are cooked through.
While the wings are baking, combine all remaining ingredients in a blender and mix until smooth.
Pour into a non-reactive pot and bring to a boil.
Reduce the heat and allow it to simmer for about 10 minutes.
After the chicken wings are cooked, put them in a large bowl and pour the hot sauce over them.
Coat the wings well. Place the wings in a single layer on a baking sheet. Bake for about 7 - 10 minutes, or until the wings are heated all the way through.
Sprinkle cilantro over wings for garnish.
