SPOOKY TEA SANDWICHES

(Makes 12 large sandwiches or 24 appetizer portions)

Egg Chive filling:

  • 2 hard boiled eggs, chopped
  • 2 tablespoons mayonnaise
  • 2 teaspoons chives, sliced fine
  • Salt & pepper
  • 1/4 cup butter, softened
Devilled Crab filling:
  • 4 ounces crabmeat
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon zest, chopped
  • Drops hot pepper sauce
  • 1/4 teaspoon dry mustard

Egg Chive:

Mix together the eggs, mayonnaise, chives, salt, pepper. Butter each piece of bread on one side, and spread egg filling evenly over one slice. Cover with the second slice of bread.

Devilled Crab:

Mix crab, mayonnaise, zest, pepper sauce, mustard, salt, pepper. Butter each piece of bread on one side, and spread crab filling evenly over one slice. Cover with the second slice of bread.

To serve for Halloween festivities:

Using Halloween cookie cutters, cut sandwiches into various shapes of your liking. Lightly spread the rim of the sandwiches with a thin layer of soft butter and dip in black sesame seeds.
