PIGS IN A BLANKET
(Makes about 24 pieces)
For this recipe you will need:
- 4 tablespoons all-purpose flour
- 3/4 pound frozen puff pastry, defrosted
- 1 pound small sausage links, no more than 1/2 inch thick, cut into 1 1/2 - 2 inch lengths
- 2 tablespoons mustard*
- 1 egg plus 1 tablespoons of cold water
- Salt & Pepper to taste

Preheat oven to 425°F.
Lightly dust a counter with flour and roll out the puff pastry to about 1/8-inch thickness.
Cut the dough into small triangles 2-inch along each side.
Brush the sausage pieces with the mustard.
Place the sausage along one edge of the dough and roll the dough around it.
Beat the egg and water to make an egg wash and brush each wrapped sausage with it.
Sprinkle with salt & pepper.
Place on a parchment lined baking sheet and bake for about 20 minutes. Serve warm.
* Choose a flavor of mustard to your liking.
