SPICED NUTS
(2 1/2 cups)
For this recipe you will need:
- 2 1/2 c mixed nuts or your choice
- 2 tablespoons vegetable oil
- 1 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 2 tablespoons sugar
- 1 teaspoon salt

Preheat oven to 300°F.
Heat the oil in a heavy saucepan over medium-low heat.
Add the cumin and cayenne and stir until the mix becomes aromatic, about 15 seconds.
Pour the flavoured oil over the nuts.
Add the sugar and salt and coat well.
Transfer the nuts to a baking pan and bake, stirring occasionally for about 20 minutes.
