SOUTH SIDE OKRA AND TOMATOES

South Side Okra and Tomatoes

(Serves 4)

For this recipe you will need:

  • 1 1/2 pound fresh okra
  • 2 tablespoons olive oil
  • 1/2 cup onion, thinly sliced
  • 1 1/2 cups tomatoes, seeded and chopped
  • 4 cloves garlic, finely chopped
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • To taste freshly ground pepper
  • Pinch red pepper flakes
  • 1 cup cooked corn kernels, optional

Wash the okra. Trim the ends, as needed. Heat the olive oil in the skillet. Add the onions and cook 2 minutes. Add the okra and cook gently 5 minutes. Add the tomatoes, garlic, thyme, salt, pepper, red pepper flakes, and, if desired, corn. Stir to mix well and distribute the seasonings. Cook 10 to 15 minutes more. Check seasonings and serve.
