GLAZED HOME-MADE DOUGHNUTS

(Serves 4)

For this recipe you will need:

  • 4 1/4 ounce packages active dry yeast
  • 1 c warm water (105°F)
  • 1 1/4 c warm milk (approx. 105°F)
  • 3/4 cup vegetable shortening
  • 1/2 cup sugar
  • 3 large eggs, beaten
  • 2 tsp salt
  • 8 cups all-purpose flour
  • 2 cup vegetable oil

Glaze:

  • 2/3 c boiling water
  • 16 oz powdered sugar
  • 1 tbsp vanilla extract

Using the bowl of a stand mixer, add the dry yeast to warm water and allow the mixture to sit until it becomes foamy, approximately 7 minutes. Add warm milk, shortening, sugar, eggs, and salt. Mix at medium speed until well blended (do not overbeat and allow mixture to become frothy). Switch to the dough hook and add the flour 1 cup at a time, mixing until the dough forms a ball that follows the hook around the bowl.

Placed the dough into a lightly greased bowl and cover it lightly with a tea towel. Allow to rise for 30 minutes in a warm place.

Punch the dough down and place on a floured surface. Roll the dough out to ?-inch thickness and cut with a doughnut cutter. Cover the doughnuts with a tea towel and let rise until double in bulk, about 45 minutes to an hour.

Place the oil in a skillet or saucepan that has sides with a minimum height of 2 inches. The oil should come up the sides of the pan one inch. Heat oil to 350°F. Fry the doughnuts, 3 - 4 at a time, turning as needed, until golden brown. The first side should take approximately 2-4 minutes, and the second side should take approximately 1-3 minutes.

Glaze:
Mix boiling water with powdered sugar and beat well until smooth. Beat in vanilla. Glaze doughnuts while still warm.
