ANGELS ON HORSEBACK
(Serves 6)
For this recipe you will need:
- 6 oysters, shelled or canned
- 2 teaspoons lemon juice
- 2 tablespoons parsley, finely chopped
- 1 teaspoon Worcestershire Sauce
- Freshly ground black pepper to taste

- 2 slices white bread
- 1 tablespoon olive oil
- Pinch each salt & pepper
- 2 slices bacon
- 1 tablespoon butter, softened
- 4 tablespoons parsley, finely chopped

Preheat the oven to 350°F.
Mix oysters, juice, sauce, parsley and pepper.
Cover and rest for 30 minutes.
Using a round cutter cut the bread into 6 rounds.
Brush one side of the bread with the olive oil.
Sprinkle with salt & pepper.
Place on a baking sheet and bake in the oven until toasted.
Remove from the oven and let cool completely.
Stretch out the bacon to twice their length and cut into 3 pieces.
Wrap oysters in bacon and skewer with toothpick.
Bake at 350°F until crispy.
Thinly coat the outer edge of the toast rounds with the butter.
Press the parsley onto the butter to form a ring around the toast.
Top with the warm oyster and serve immediately.
