ANGELS ON HORSEBACK

(Serves 6)

For this recipe you will need:

  • 6 oysters, shelled or canned
  • 2 teaspoons lemon juice
  • 2 tablespoons parsley, finely chopped
  • 1 teaspoon Worcestershire Sauce
  • Freshly ground black pepper to taste
  • 2 slices white bread
  • 1 tablespoon olive oil
  • Pinch each salt & pepper
  • 2 slices bacon
  • 1 tablespoon butter, softened
  • 4 tablespoons parsley, finely chopped

Preheat the oven to 350°F. Mix oysters, juice, sauce, parsley and pepper. Cover and rest for 30 minutes. Using a round cutter cut the bread into 6 rounds. Brush one side of the bread with the olive oil. Sprinkle with salt & pepper. Place on a baking sheet and bake in the oven until toasted. Remove from the oven and let cool completely. Stretch out the bacon to twice their length and cut into 3 pieces. Wrap oysters in bacon and skewer with toothpick. Bake at 350°F until crispy. Thinly coat the outer edge of the toast rounds with the butter. Press the parsley onto the butter to form a ring around the toast. Top with the warm oyster and serve immediately.
