DEVILED EYEBALLS

(Makes 12 appetizers)

  • 6 hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 1 and 1/2 teaspoons Dijon mustard
  • 1 green onion
  • 2 tablespoons chopped parsley
  • salt
  • ground black pepper
  • paprika
  • 6 green or black olives, halved

Slice the white part of the green onion very thinly. Slice the hard-boiled eggs in half horizontally and scoop out the yolks. Mash the yolks with a fork and add the mayonnaise and mustard. Stir in the white part of the sliced green onion and the parsley. Add pepper, salt, & paprika to taste. Using a teaspoon, fill the halved egg white with the egg yolk mixture. Add the olives on top to look like eyeballs.
