TURKEY CHILI

(Serve 6 - 8)

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 3, 14 1/2 ounce cans black beans
  • 2 cans, 14 ounce diced tomatoes
  • 1 cup tomato sauce
  • 1 pound cooked turkey breast, cut up into 1/2 inch cubes
  • 1 1/2 teaspoons cumin
  • 1/4 teaspoon red pepper flakes, more if desired
  • 1/3 cup parsley, chopped
  • 1/3 cup cilantro, chopped
  • Salt and pepper to taste

Heat a 4 to 5 quart soup pot or dutch oven over medium heat, then add the olive oil. Saute the onion and the garlic in the olive oil until soft.

Add the beans, tomatoes, tomato sauce, turkey, cumin, red pepper flakes and cook over medium heat until hot. Sir in the chopped cilantro and parlsey. Season with salt and pepper.
