BLACK BEAN AND SUN-DRIED TOMATO SOUP MIX

  • 3 cups dried black beans
  • 1/3 cup sun-dried tomatoes (packed without oil or liquid of any kind)
  • 1 package powdered onion soup mix (approx. 1 1/4 ounce)
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp dried cilantro
  • 1 tsp salt

Using a wide-mouth, 1-quart canning jar, place half the black beans into the jar. Add the sun-dried tomatoes, followed by the rest of the black beans. Sprinkle the powdered onion soup mix over the beans. To make a spice sachet, cut a four-inch piece of cheesecloth and put the oregano, basil, dried cilantro and salt into the center. Gather the outside edges of the cheesecloth around the spices to form a ball and tie together with string. Alternatively, you can add the spices to a small, sealable plastic bag. Add the spices to the soup mix jar and seal.

To make the soup:

Empty all the soup ingredients into a slow cooker. Add 6 cups water, set on low, and allow to cook for six to eight hours.
