OVEN-ROASTED CHERRY TOMATOES

These tomatoes are especially delicious with some of the wonderful artisan sea salts available in so many stores these days.

(Serves 4)

  • 1/2 pint cherry tomatoes or 12 ounces large cherry tomatoes
  • Olive oil
  • Salt and pepper to taste

Preheat the oven to 350°F.

Place the cherry tomatoes on a sheet pan with sides. Toss with the olive oil, salt and pepper.

Roast for 5 minutes (8 minutes if using large cherry tomatoes) until wrinkled.
